Recipe Week 2: 7-Up Cake


Seven –Up Cake  Recipe…

This is a recipe that is well over 30 years.  We found this one in the  Aroma’s Cookbook – a fundraising project at my childhood Church in Virginia.  These cookbooks are treasures that bring back so many wonderful memories.   Our only problem was the frosting…we found that it did not spread but that could be that we just didn’t wait long enough for it to cool, we were anxious to get to the tastin’

Ingredients for the Cake

·     * 1 pkg. Duncan Hines Lemon supreme cake mix
·     * 1 box lemon or pineapple instant pudding (we chose lemon)
·      *4 eggs
·      *½ c. oil
·      *¼ c. sour cream (Not reduced fat or fat free, use the real stuff)
·      *1 (10 oz.) bottle of 7-Up

Ingredients for Frosting
*1 ½ c. sugar
* 1 stick butter
*2 beaten eggs
*2 tbsp. flour
*3 oz. of coconut
*1 small can crushed pineapple (approx. 8 oz.)

To Make the Cake…

*Preheat 350.
*Grease a 9 X 13 cake pan…We used a Wilton cake pan available at Wal-mart -$8.97
*Mix all ingredients except for 7-Up.
 *After mixing the ingredients, Slowly add the 7-Up.
*Pour into prepared pan
*Bake for 35- 40 minutes.
*Then….




To Make Frosting…

*In a saucepan, melt butter
*add sugar, flour, beaten eggs, and pineapple.
*Cook over low heat for 10 minutes.
*LET COOL.
*Add coconut and spread over cake!
