Cake #8 -Presleigh's Birthday Cake

She requested and we delivered--- a Red Velvet Cake with Cream Cheese Frosting.  We used a ready made cake mix but did not totally follow the back of the box.  For great ideas and recipes, check out the Cake Doctor.  She has at least 4 cookbooks out and they are all fantastic.  One great tip for y'all this week is something we do now when we ice the cake.  Thanks to Buddy, the ultimate Cake Boss!  Don't you just love him..."That's awesome, Baby!!"  So here are the recipes, tips and pics - hope you enjoy!!


Here's the how to....
*Mix 1 Duncan Hines red Velvet Cake Mix, 3 large eggs, 3/4 cup oil, 3/4 cup milk and 1 tsp. vanilla extract.
*Beat all together about 2 minutes until well blended.  **It was fun to watch the mix go from chocolate to red in a matter of seconds.

See the chocolate change to red velvet.....




Pour batter into grease and floured pans.  Bake at 350 for 27 minutes.  Don't overbake...Chocolate cakes don't like that:(

And then of course, LICK the Batter Bowl Clean!!
For the Frosting...We cheated  chose to use wonderful store bought icing....It does work in a pinch.  I was so busy with the London party that something had to give...But here is our tip:


Do you see the parchment paper?  We tear pieces and place them under the bottom layer of the cake just enough that it won't fall off our plate.  Then we frost and whatever falls, falls onto the paper and not the plate.  Once completed, remove the pieces and Voila, a beautiful frosted cake with a clean edge and serving plate!!
