Cake #7- Heavenly Chocolate Bar Cake

This cake was great to make!  The ingredients are ones we had on hands, except the Milky Ways.  The batter was wonderful even before we added the melted milky ways.  So if for some unknown, unexplainable reason you didn't want Milky Ways (MW) in your cake, I believe it would be a great white cake.  One tip for you is that it does take a while for the MW bars to melt, so start this a little before you begin the batter.  For the frosting, three things we learned...this recipe makes tons of frosting!!  We still have some in the fridge, great for a spoonful every now and then; Freeze 5 - 7 candy bars while cake is baking and when you are ready to frost, they will be ready to garnish and last, do not put too much ice and water in the bowl, as the ice melts, the water sloshes out and gets the cord wet.  Don't worry, no shocking story here..but that is because Savannah said..."Uh, mom..is this bad that the cord is going to get wet?"  Immediately, we turned the mixer off and wiped up the water.   Have fun with this recipe...we sure did!!




For the Cake
9 fun-size or 21 mini Milky  Ways
1 1/2 cups butter, softened and divided
2 cups sugar
3 large eggs
2 1/2 cups all-purpose flour
1 tsp salt
1 1/2 cups buttermilk
1/2 tsp baking soda
1 tsp vanilla extract


For the Frosting
3 cups miniature marshmallows
3/4 cup butter, cut up
3/4 cup evaporated milk
6 oz. unsweetened chocolate, chopped
6 cups powdered sugar
4 to 6 tbsp. milk
1 tbsp. Vanilla extract


To make the Cake
*Preheat oven to 350
*Generously grease and flour  2 or 3 round cake pans (we used 2 for thicker layers)
* Melt candy bars and 1/2 cup butter in a heavy saucepan over low heat, stirring constantly until smooth
*Beat sugar, and remaining 1 cup of utter at medium speed with an electric mixer.
*Add eggs, 1 at a time beating well after each addition.
*Combine flour and salt.
*Whisk together buttermilk and baking soda.
*Gradually add flour mixture to sugar mixture alternately with buttermilk mixture-beginning and ending with the flour mixture.
*Beat at low speed just until blended after each addition.
*Stir in melted candy bar mixture and vanilla
*Spoon batter into prepared pans
AND THEN..

It really is that good!!!
Don't you just love those eyes!!!



*Bake for 30 minutes
*Let cool in pans on wire racks 10 minutes
*Remove from pans to wire racks and cool completely

To make the Frosting
*Melt first 4 ingredients in a 2 qt. saucepan over med-low heat, stirring constantly until melted and smooth.
*Transfer chocolate mixture to a large bowl.
*Place bowl into a larger bowl  filled with ice and water.
*Gradually add powdered sugar alternately with 4 Tbsp. ilk (we used all 6 tbsp), Beating on low speed with an electric mixer until blended after each addition.
*Increase speed to med-high and beat 5 minutes or until frosting is cool, thick and spreadable.
*Stir in vanilla
*Use immediately





*Garnish with chopped frozen MW if you would like.

Serve it up nice and Texas style (Big) with a glass of milk!!!
