Coca Cola Cake - made with the Real Thing - Coke

This cake was a pleasure to make.  The ingredients were already in my pantry which is always an added bonus.  It would be a great crowd pleaser  or a great family dessert served with a glass on milk!!  This particular recipe is from Classic Southern Desserts (available at Barnes and Noble)


Ingredients for Cake
3/4 c. pecans -toasted at 350 degrees for 8-9 minutes
1 c. Coke
1/2 c. buttermilk
1 c. butter, softened
1 3/4 c. sugar
2 large eggs, lightly beaten
2 tsp. vanilla extract
2 c. all purpose flour
1/4 c. unsweetened cocoa
1 tsp. baking soda
1 1/2 c. miniature marshmallows

Ingredients for Frosting
1/2 c. butter
1/3 c. Coke
3 Tbsp. unsweetened cocoa
1 (16 oz.) powdered sugar
1 Tbsp. vanilla extract


To make the Cake 

  • Preheat oven to 350.
  • If using pecans, toast first.
  • Combine Coke and buttermilk
  • Beat butter at low speed (with electric mixer) until creamy 
  • Gradually add sugar, beating until blended

  • Add eggs and vanilla
  • Beat at low speed until blended
  • Combine flour, cocoa, and baking soda.
  • Add to butter mixture, alternating with Coke mixture
  • Beat at low speed until blended
  • Stir in marshmallows
  • Pour batter into greased 9X13 pan
  • THEN...



  • Bake for 30 - 35 minutes
  • Pour frosting over warm cake
  • Sprinkle with pecans if desired.
To make the Frosting
  • Bring first 3 ingredients to a boil in a large saucepan over medium heat, stirring until butter is melted
  • Remove from heat
  • Whisk in sugar and vanilla 
  • Pour immediately over warm cake.
