Gooey Butter Cake- #4

This cake was ever so easy!!! We love that...Don't you?  We had all the ingredients on hand, except for one.  We didn't have enough of salted butter so we substituted unsalted in the filling.  No one can taste the difference.  For the cream cheese, I wouldn't recommend using reduced fat or fat free.  It will not blend and bake as well.  This recipe is in her cookbook The Lady and Sons Just Desserts.  


Ingredients for the Cake
1 18.25-ounce box yellow cake mix
1 egg
1/2 cup (1 stick) butter, melted

Ingredients for the Filling
1 8-ounce package cream cheese, softened
2 eggs
1 tsp pure vanilla extract
1 16-ounce box powdered  sugar
1/2 cup (1 stick) butter, melted
1 cup chocolate chips (optional)

To make the Cake 


*Preheat the oven to 350 degrees.
*Lightly grease a 9 X 13 X 2 pan.
*In the bowl of an electric mixer, combine cake mix, egg and butter.  Mix well.
*Pat into the bottom of the prepared pan.  Set aside.



*Still using the electric mixer, beat cream cheese until smooth.  (Tip:  Don't rush this step, the smoother the better when you add the rest of the ingredients.)
*Add eggs and vanilla.
*Dump in powdered sugar.  Beat well.

*Reduce speed and slowly pour in the melted butter.  Mix well. ( I actually took these..umm, not so bad)



*Pour filling onto cake mixture and spread evenly.


THEN...Lick the spoon!


*Sprinkle chocolate chips on top of the filling like this...

 



*Bake for 40 to 50 minutes.  Ours Took the whole 50 minutes.  You want the edges to be a bit "brown" and the center gooey but not runny.  And hopefully, it will look something like this.  Allow it to cool completely - well almost.  We were impatient so warm is good!
