Ingredients for Cake
3/4 c. pecans -toasted at 350 degrees for 8-9 minutes
1 c. Coke
1/2 c. buttermilk
1 c. butter, softened
1 3/4 c. sugar
2 large eggs, lightly beaten
2 tsp. vanilla extract
2 c. all purpose flour
1/4 c. unsweetened cocoa
1 tsp. baking soda
1 1/2 c. miniature marshmallows
Ingredients for Frosting
1/2 c. butter
1/3 c. Coke
3 Tbsp. unsweetened cocoa
1 (16 oz.) powdered sugar
1 Tbsp. vanilla extract
To make the Cake
- Preheat oven to 350.
- If using pecans, toast first.
- Combine Coke and buttermilk
- Beat butter at low speed (with electric mixer) until creamy
- Gradually add sugar, beating until blended
- Add eggs and vanilla
- Beat at low speed until blended
- Combine flour, cocoa, and baking soda.
- Add to butter mixture, alternating with Coke mixture
- Beat at low speed until blended
- Stir in marshmallows
- Pour batter into greased 9X13 pan
- THEN...
- Bake for 30 - 35 minutes
- Pour frosting over warm cake
- Sprinkle with pecans if desired.
